Certified Freedom Run Farm Lamb is a USDA‑certified, chef‑driven lamb program developed to deliver consistent flavor, yield, and performance on the plate.
Born in Kentucky in 2011 and developed alongside chefs, the program has grown into a nationwide network of independent American shepherds raising lambs to the same verified specifications—ensuring reliability across menus, seasons, and service styles.
What Makes Our Lamb Different
Unlike most lamb sold in the U.S., which is often a byproduct of wool production, Certified Freedom Run Farm Lamb is raised specifically for eating quality. Our program prioritizes large‑frame, meaty carcasses with excellent marbling, mild flavor, and predictable yields.
Every lamb in the program is evaluated against the same USDA‑verified standards, regardless of geography or breed composition, so chefs can spec with confidence.
Breed Selection & Program Evolution
The Freedom Run Farm Lamb program was originally developed on our founding Kentucky farm using Katahdin sheep, a breed that played a foundational role in shaping our carcass specifications, marbling expectations, and eating quality standards.
As the program expanded to support more American shepherds, we evolved to include additional breeds and breed crosses within an American Heritage breed grouping—an umbrella term used to describe sheep breeds with deep historical roots in early American and Appalachian agriculture.
Today, no single breed defines the program. Instead, lambs are selected based on performance against USDA‑certified specifications, including carcass size, grading, yield, and consistency. This ensures chefs receive the same results regardless of source region.
To qualify as Certified Freedom Run Farm Lamb, carcasses must meet the following USDA‑verified criteria:
U.S. Choice or Prime
Yield Grade 3.9 or lower
Hot Carcass Weight approximately 85–96 lbs
Raised and finished according to Freedom Run Farm’s certified management standards

Raising & Finishing
Freedom Run Farm Lamb is raised primarily on pasture and finished using a carefully managed combination of forage and supplemental feed. This approach supports animal health, responsible land stewardship, and the consistent marbling and mild flavor chefs expect from the program.
