Our Program
Freedom Run Farm Lamb is a USDA-certified program created to support American shepherds and deliver a consistently exceptional lamb-eating experience.
The program began in Kentucky in 2011 on a single-family farm, where Katahdin sheep were raised in collaboration with chefs to develop a lamb defined by flavor, marbling, and generous yield. As demand grew, so did the opportunity to create a broader path to market for American shepherds raising lambs to the same standards.
Today, Freedom Run Farm Lamb connects independent producers across the United States—from the Appalachian foothills to the Rocky Mountains—under a single, USDA-verified specification. While breeds may vary within an approved American Heritage grouping, every lamb is evaluated against the same criteria for carcass quality, grading, and yield.
Freedom Run Farm does not operate as a single farm or a commodity aggregator. Instead, we function as a certified brand program—providing clarity, accountability, and transparency at every step from pasture to plate.
“Best f..king lamb on the planet.
At our restaurants, we source lamb from Freedom Run Farm not only for its exceptional quality, and sustainable farming practices, but also for the strong relationships we have cultivated with Valerie and her team. By having the farmer process their own animals, they demonstrate a profound commitment to the quality of the final product. This practice serves as a testament to the dedication of our region in preserving heritage breed lamb.”
